I'm happy to report that last week went much better. By changing a few things around I ended up feeling a lot better. I skipped a few days at the gym and reduced my sugar intake (someone has a sweet tooth). Also, through more trial and error I found some delicious recipes including veggie enchiladas and a tofu sweet potato breakfast scramble. After the first breakfast scramble that tasted terrible I was a little shy about trying another recipe but I'm glad I did. When I saw the new recipe didn't have tumeric in it I knew it had to be better.
One thing that I am doing a lot of lately is snacking. I find that my tummy starts to get my attention every 2 to 3 hours. My favorite snack this summer has been lemon yogurt with berries. I started eating this when we were on the vacation at the beach earlier this summer and I'm still loving it. Here's how you make it...
If you are using plain yogurt you may want to add a teaspoon of vanilla extract.
Take a cup of vanilla or plain yogurt and zest your lemon right into the yogurt. I use soy yogurt because I haven't been eating dairy for about a year.
Tip - be sure to zest your lemon BEFORE you juice it.
Squeeze the juice from your lemon and mix it into your yogurt. Next break out the agave nectar or honey (whatever natural sweetener you like) and put about a teaspoon in and stir. Give it a taste and see what it needs more of and add until you have the desired taste. Now cover and stick it back into the fridge and get it really cold (I have food temperature issues which you can read about here).

When you are ready for a snack or dessert, pull that bad boy out and toss some berries on it and you are good to go! Any kind of berry will work, on vacation I used strawberries, blueberries and raspberries. There is nothing better coming back to the beach house all hot and sweaty and pulling out a cold cup of lemon yogurt with berries. I'm smiling just thinking about it!
