GGV - Week 2

Day 9

Well ... I've been doing the vegan diet thing for a full week and let me tell you I've been feeling terrible.  On day 5 I hit my physical low point and am slowly feeling better (that's what I keep telling myself anyway).

Happily, I have developed is a new appreciation for tofu and soy products.  Last week I made a couple of desserts with tofu that turned out beautifully and edamame is a great snack in the afternoon.

At this point, I'm not a big fan of this approach though it is forcing me try some new foods and recipes.

Week 2 - I hope you're full of pleasant surprises!
