The Best Granola I've Ever Had
On my food elimination journey, which lasted
First, I started with an Alton Brown recipe for granola. Then, I had to make it my own by changing it around to fit my dietary needs. I eat this granola pretty much everyday with almond milk. The following is what I came up with...
3 cups of Gluten Free Rolled Oats
1 cup each, sliced almonds, walnut pieces, sweetened coconut
1/4 cup golden flax seed meal
Take the above ingredients and mix together in a bowl.
In a small bowl gently warm 1/4 cup unrefined coconut oil ( I am a huge fan of coconut oil) until it's liquid. Next, add 1/4 cup agave nectar and stir together. Take this mixture and pour it over your oats and nuts. Stir until everything is evenly coated and toss it onto a cookie sheet that has sides. Sprinkle with sea salt and bake in the oven at 250 degrees for 1 hour and 15 minutes, stirring every 15 minutes so that it browns evenly.
It's perfect just as it is, but if you would like to add some dried fruit do so AFTER you have cooked the granola. This recipe is really a starting point so feel free to change it to your family's tastes.
